Maple & Ash is redefining today's steakhouse experience, one moment at a time. With a menu crafted by two-Michelin-star Chef Danny Grant, and a wine list named one of the most outstanding in the world by Wine Spectator, we find a way to make every celebration one to remember

Maple & Ash came to us needing to enhance their brand impact. They needed consistency across their locations and to minimize risk of supply chain shortage while maintaining quality control.

Scopo Solution

We curated custom designs on togo bags, togo boxes, steak knives, branded metal straws - with the goal of “secondary marketing” wherein the client posts images of our products on social media.

Logistical processing and organizing is done by Scopo. To often items are discontinued with a regular distributor and manufacturer. The entirety of the purchasing process is managed by Scopo specifically for Maple & Ash. Inventory warehousing takes up a lot of space that restaurants are better off using for tables and chairs.

We helped Maple & Ash on new openings and maintaining inventory and setting ordering pars with the onsite manager.

Edies

All-Day Modern Cafe
Edie’s is a downtown Chicago cafe with 2 locations where you can grab a coffee to-go, sit down for a meal, or grab a drink at the end of the workday.
Problem

Edies came to us wanting to enhance their brand power, with an emphasis on coffee cups and takeout to go packaging. This was a new opening and they wanted to establish consistent products across all locations.

Approachable and elevated neighborhood cuisine
Centered around a wood-fired hearth, we create sophisticated yet familiar dishes using expert cooking techniques. With a frequently updated menu of wood-fired pizzas, housemade pastas, and farm fresh salads, etta is a celebration of rustic cuisine that is thoughtful of the season. Etta is a neighborhood restaurant that serves delicious, wood-fired food in a fun, relaxed dining environment. It’s a perfect spot for friends and family alike to eat and drink as if they are in their own home. Poised for hyper-growth, etta has seen its locations expand from 1 to 4 with multiple locations planned for the future.

For example, a client buys 500 plates on opening only to have their plate discontinued by the manufacturer 6-8 months later. This allows them to do 1 of 2 things. 1.) swap out existing plateware (expensive) or 2.) find someone who can re-manufacture (expensive). This takes time and money away from efforts that should be maintained at catering to the needs of guests.
